Paleo Beakfast Cookies.

A tasty & healthy way to start your day!:)  Gluten free, dairy free, refined sugar free:)

Ingredients:

  • 1 medium sweet potato, about 350g, cooked (I steamed mine for 10-12 minutes in the microwave)
  • 1/2 cup almond flour
  • 1/4 cup honey
  • 2 eggs
  • 1 tsp vanilla extract
  • 1/2 tsp baking soda
  • 1 tsp cinnamon
  • 3/4 cup coconut flakes
  • 3/4 cup walnuts, chopped
  • 1/2 cup cranberries
  • a pinch of salt

Method:

  1. Using a fork mash the sweet potato.
  2. In a bowl beat the eggs and then stir in the rest of the ingredients.  Mix until combined.
  3. With wet hands shape the mixture into small balls, place them on a baking sheet lined with parchment paper.
  4. Bake at 180°C for about 15 minutes.
