Paleo Beakfast Cookies.
A tasty & healthy way to start your day!:) Gluten free, dairy free, refined sugar free:)
- 1 medium sweet potato, about 350g, cooked (I steamed mine for 10-12 minutes in the microwave)
- 1/2 cup almond flour
- 1/4 cup honey
- 2 eggs
- 1 tsp vanilla extract
- 1/2 tsp baking soda
- 1 tsp cinnamon
- 3/4 cup coconut flakes
- 3/4 cup walnuts, chopped
- 1/2 cup cranberries
- a pinch of salt
- Using a fork mash the sweet potato.
- In a bowl beat the eggs and then stir in the rest of the ingredients. Mix until combined.
- With wet hands shape the mixture into small balls, place them on a baking sheet lined with parchment paper.
- Bake at 180°C for about 15 minutes.
