Summer Vegetable Tian with an Italian Touch.

INGREDIENTS:

  • 1 medium eggplant
  • 2 large tomatoes
  • 2 medium yellow zucchini
  • 2 garlic cloves, minced
  • 250 g ricotta cheese
  • fresh thyme
  • salt / pepper
  • vegetable oil ( I used walnut oil)

METHOD:

  1. Slice the unpeeled vegetables in circles.
  2. Layer the vegetables alternately in the baking dish, fitting them tightly and making only 1 layer.
  3. Sprinkle with salt, pepper and fresh thyme.
  4. Arrange the chunks of ricotta cheese on top of the vegetables.
  5. Sprinkle with 3 to 4 tbsp of vegetable oil.
  6. Bake for 40-45 minutes at 180°C.
