Spicy Cod Fillet in Sauvignon Blanc & Orange Sauce

Spicy Cod Fillet in Sauvignon Blanc & Orange Sauce.

INGREDIENTS:

Marinade:

  • 2 cod fillets (450-500 g)
  • 2 tbsp olive oil
  • 1 tsp thyme
  • 1 tsp oregano
  • 1/2 tsp ground paprika
  • 1/2 tsp ground red chilli pepper
  • salt / pepper, to taste
  •  1 tsp butter for frying

Sauce:

  • 1/2 tbsp butter
  • juice & zest from 1/2 orange
  • 1/2 cup Sauvignon Blanc wine
  • 100 ml cream
  • 1 tsp mustard

METHOD:

  1. Place the cod fillets in a deep dish, season them, drizzle with oil and then top with herbs and spices. Cover with clingfilm & set aside for a couple of hours. You may also leave the dish in the fridge.
  2. In a medium saucepan, melt butter, then add orange juice & zest and bring to boil.  Progressively stir in wine, mustard and cream. Let the sauce simmer for a few minutes until it becomes homogeneous and slightly thickens.
  3. In a large saucepan, melt butter, then place the fillets. Cover with a lid and fry for 3 to 4 minutes.  Poor the sauce over the fillets and cook for 2-3 more minutes.
  4. Serve with boiled popatoes, sprinkled with ground paprika (optional).
