Spicy Cod Fillet in Sauvignon Blanc & Orange Sauce.
2 cod fillets (450-500 g)
2 tbsp olive oil
1 tsp thyme
1 tsp oregano
1/2 tsp ground paprika
1/2 tsp ground red chilli pepper
salt / pepper, to taste
1 tsp butter for frying
1/2 tbsp butter
juice & zest from 1/2 orange
1/2 cup Sauvignon Blanc wine
100 ml cream
1 tsp mustard
Place the cod fillets in a deep dish, season them, drizzle with oil and then top with herbs and spices. Cover with clingfilm & set aside for a couple of hours. You may also leave the dish in the fridge.
In a medium saucepan, melt butter, then add orange juice & zest and bring to boil. Progressively stir in wine, mustard and cream. Let the sauce simmer for a few minutes until it becomes homogeneous and slightly thickens.
In a large saucepan, melt butter, then place the fillets. Cover with a lid and fry for 3 to 4 minutes. Poor the sauce over the fillets and cook for 2-3 more minutes.
Serve with boiled popatoes, sprinkled with ground paprika (optional).
