Bean & Chickpea Salad

INGREDIENTS: (6/7 servings)

  • 1 cup canned chickpeas
  • 1 cup canned white beans
  • 150 g asparagus, trimmed, steamed, cooled, then cut into 3 cm pieces
  • 1/2 yellow bell pepper, diced
  • 1/2 red bell pepper, diced
  • 1/2 large cucumber, peeled and diced
  • 1/2 red onion, diced
  • 1 small spring onion, chopped
  • a handful of grape tomatoes, sliced lengthwise
  • 1/2 cup black olives (optional)
  • 100 g feta cheese, sliced

Dressing:

  • 1/4 cup olive oil
  • 2 tbsp balsamic vinegar
  • 2 garlic cloves, pressed
  • 1/2 tsp honey mustard
  • 1/2 tsp oregano
  • salt / pepper

METHOD:

  1. Separately combine all the salad ingredients and the dressing ingredients.
  2. Pour the dressing over the vegetables just before serving.  Mix well. Done!:)
