Stir-Fried Pork with Chanterelles & Safran

Stir-Fried Pork with Chanterelles & Safran

INGREDIENTS:

  • 500 g pork, diced in small/medium chunks
  • 300 g chanterelles, sliced
  • 2 medium onions, minced
  • 1 medium carrot, sliced
  • 2 garlic cloves, minced
  • 3 tbsp sour cream
  • 1 tbsp dill, chopped
  • 1 tsp curcuma
  • a pinch of safran
  • salt/pepper
  • olive oil

METHOD:

  1. In a large and deep frying pan, heat some olive oil and fry onions, carrot and garlic for a few minutes.
  2. Add pork and cook until golden, then add chanterelles and spices and stir over medium heat for a few minutes, until tender.
  3. Finally stir in sour cream and simmer until the liquide is reduced and the sauce becomes thick.
  4. Serve with rice or boiled potatoes.
