Upside-Down Orange & Almond Cake

INGREDIENTS:

  • 3 oranges
  • 4 eggs
  • 100 g butter, room t°
  • 250 g sugar + 30 g sugar
  • 120 g flour
  • 50 g almond powder
  • 10 g baking powder
  • 10 g vanilla sugar
  • 1 tsp almond extract

METHOD:

  1. Beat butter with 150 g sugar and vanilla sugar, then add eggs 1 by 1.
  2. Sift in flower and baking powder, then add almond powder and almond extract.
  3. In a small saucepan, bring 100 g sugar to boil and simmer until it is caramelised.
  4. Pour the caramel over the bottom of a round baking dish. Top with 2 sliced oranges.
  5. Pour over the dough spreading it evenly.
  6. Bake for 20-30 minutes at 180°C.
  7. Let the cake cool down. When ready, turn it upside down on a serving plate.
  8. Squeeze the juice from the remaining orange, add 30 g sugar and bring to boil over low heat until it's slightly caramelised.
  9. Glaze the cake and serve.
