1kg carrots zest & juice from 1 orange 2 tbsp sesame seeds 1 tsp honey 1 tsp grilled almonds 100g raisins olive oil chopped parsley salt / pepper
Instructions:
Chop the carrots in random shapes, place on a baking tray & drizzle with some oil, sprinkle with sesame seeds, salt & pepper. Bake at 180°C for 40-45min turning them 1/2 way through.
Sauce: In a saucepan bring to boil the honey, the orange juice + zest & the raisins. Turn off the heat when it all starts to bubble & the honey is absorbed.
Before serving, sprinkle the carrots with the sauce, chopped parsley & grilled almonds.
PS....a perfect side dish for Xmas!)) Besides, if you're constantly craving sugar (like me), then try to incorporate some sweet veges (sweet potatoes, sweet peas, rutabagas, beets) in your daily diet routine (!!! not suitable for people suffering from diabetes).
