250g flour 150g butter 160g sugar 4 medium apples, peeled, cored & sliced 3 eggs zest & juice from 1/2 lemon 3 tbsp milk 1 tsp vanilla extract 2-3 tsbp strawberry jam 1/2 tsp baking powder 1 pinch of salt
Method:
Using an electrical mixer beat butter, then add sugar & eggs 1 by 1, followed by vanilla extract, lemon juice & zest. In a separate bowl mix together flour, salt & baking powder. Add flour mixture to sugar mixture and stir until smooth. Add milk & stir again (feel free to add more milk if the mixture isn't smooth enough). Transfer into a round 25cm diam.baking pan. Arrange sliced apples on top & bake for 40-45min at 180°C. While the cake is still hot top with strawberry jam.
