Apple Upside Down Cake

Apple Upside Down Cake.

Ingredients:

Apple base:

  • 4-5 apples
  • 50g butter
  • 7 tbsp sugar
  • 1 tsp cinnamon

Batter:

  • 75g butter, room t°C
  • 5 tbsp sugar
  • 3 eggs
  • 3 tbsp sour cream
  • zest & juice from 1 lemon
  • 1 tsp vanilla extract
  • 2 tsp baking powder
  • 11 tbsp flour

 

  • icing sugar

Method:

  1. Peel apples, sprinkle with lemon juice, cut them into wedges, remove the core & slice.
  2. In a saucepan melt 40g butter. Add 5 tbsp of sugar & let it simmer until golden brown.
  3.  Pour the butter/sugar sauce into a round 22cm diameter baking pan, place apple chunks over the sauce.
  4. Sprinkle with 2 tbsp of sugar, cover with tiny chunks of butter (10g).
  5. Bake at 180°C for 10min.

Meanwhile prepare the batter:

  1. Cream butter and sugar.
  2. Beat in egg yolks, sour cream, zest and vanilla extract.
  3. In a separate bowl beat egg whites until stiff peaks.
  4. Mix egg yolk & egg white mixtures together.
  5. Remove apples from the oven, sprinkle with cinnamon.
  6. Pour over the batter and bake for extra 20-25min at 180°C.
  7. Remove the cake from the oven, let it sit for 10-15min, then turn it upside down.
  8. Let it cool, sprinkle with icing sugar before serving.
