Double Chocolate Muffins

Double Chocolate Muffins

Double Chocolate Muffins.

Ingredients:

  • 3 eggs
  • 135g sugar
  • a pinch of salt
  • 2 tsp baking powder
  • 210g flour
  • 1 tsp vanilla extract
  • 250ml heavy cream
  • 40g dark chocolate
  • 40g chocolate powder
  • 120g dark chocolate

Method:

  1. Cut chocolate in chunks.
  2. Using an electrical mixer beat together eggs, sugar, vanilla extract & salt.
  3. In a separate bowl whip cream untill stiff peaks are formed.
  4. Add chocolate powder over cream and mix until homogenious.
  5. Pour the cream mixture into the egg mixture. Mix until all the ingredients are combined.
  6. Sift in flour & baking powder, followed by chocolate chunks.
  7. Bake at 180°C for +/- 25min.
