Using a tri-blade vegetable peeler, peel the zucchini into noodles, place them in a large bowl. Add sliced garlic, lemon juice, soy sauce & herbs, salt/pepper & marinade for 1 hr at room t°C.
Cut chicken breasts in cubes, stir fry until almost cooked (10-12 minutes), then add diced onion & cook for extra 5minutes.
Finally add zucchini noodles & stir fry for 7-10min. Finish by stiring in the tomatoes, cut in halves, until tender.
