Chickpea & Kale Curry
Chickpea & Kale Curry.

Ingredients: 500ml water, 800g cooked chickpeas, 2 kale leaves, 4 cloves of garlic, 1 big onion, 150g mushrooms, 1/2 yellow capsicum, 2 tsp ginger powder, 1 tsp hot chilli powder, 2 tsp garam masala powder, 2 tsp curry powder, 1tsp cumin, 2 hot green peppers, 1 tsp coriander powder, 3 tbs plain yoghurt, 2 tbsp vegetable oil, parsley, salt, pepper, hot chilli peppert (for d...ecoration - optional).

1) Cut garlic, onion & capsicum - fry in oil with ginger & green peppers until tender (5-6min).
2) Add chilli powder, cumin, coriander, garam masala, yoghurt. Cook for 1-2 min.
3) Add water & bring to boil followed by curry, chick peas & chopped kale leaves. Cook for 15-20 min (do not cover!).
4) Add mushrooms & cook for 2 more minutes.
5) Decorate with hot chilli peppers, spring onions (optional) & drizzle with yoghurt before surving.
