Spiced Carrot and Red Lentil Soup.
Ingredients:
700 g carrots, sliced...
150 g red lentils, uncooked
1 onion, diced
1 garlic clove, diced
1 L vegetable broth (or water)
150 ml liquid cream
2 tbsp olive oil
1 tsp ground ginger
1 tiny chilli pepper (or 1/4 tsp chilli flakes)
1 tbsp ground paprika
Garnish: cilantro, sour cream, caramelised onions
Method:
Heat oil in a saucepan, add onion, garlic and spices. Cook for 1-2 min. Then add carrots, lentils, liquid cream and vegetable broth. Cook for 15-25 min until carrots are tender. Season and blend.
Serve with cilantro, caramelised onions & sour cream.
