Very-Berry Oat Crumble Bars.
INGREDIENTS:
For the crust:
- 95 g flour
- 100 g rolled oats
- 100 g brown sugar
- 1/2 tsp baking powder
- 1/4 tsp salt
- 115 g butter, unsalted, room t°C
- 1 tsp vanilla extract
For the very-berry filling:
- 300 g mixed berries, fresh or frozen (I used frozen)
- 30 g brown sugar
- 1 tbsp cornstarch
- zest from 1 lemon
METHOD:
- Line a 18 cm square baking pan with parchment paper.
- In a large mixing bowl, combine flour, oats, sugar, baking powder and salt.
- Add butter and vanilla extract and stir using a spatula or your hands until it resembles coarse meal. Set aside 1 cup of the mixture.
- Press the remaining crumb mixture into the bottom of the pan.
- In a separate bowl, combine berries, sugar, cornstarch and zest. Toss.
- Spread the berries over the crust.
- Sprinkle the reserved cup of crumb mixture over the strawberries.
- Bake at 180°C for 30-40 minutes.
