Very-Berry Oat Crumble Bars

Very-Berry Oat Crumble Bars.

INGREDIENTS:

For the crust:

  • 95 g flour
  • 100 g rolled oats
  • 100 g brown sugar
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 115 g butter, unsalted, room t°C
  • 1 tsp vanilla extract

For the very-berry filling:

  • 300 g mixed berries, fresh or frozen (I used frozen)
  • 30 g brown sugar
  • 1 tbsp cornstarch
  • zest from 1 lemon

METHOD:

  1. Line a 18 cm square baking pan with parchment paper.
  2. In a large mixing bowl, combine flour, oats, sugar, baking powder and salt.
  3. Add butter and vanilla extract and stir using a spatula or your hands until it resembles coarse meal.  Set aside 1 cup of the mixture.
  4. Press the remaining crumb mixture into the bottom of the pan.
  5. In a separate bowl, combine berries, sugar, cornstarch and zest. Toss.
  6. Spread the berries over the crust.
  7. Sprinkle the reserved cup of crumb mixture over the strawberries.
  8. Bake at 180°C for 30-40 minutes.
