Stuffed Mini Calamari Mediterranean Recipe from Sète.

INGREDIENTS:

Sauce:

  • 500 g mini calamari, cleaned and emptied
  • 6 large tomatoes, diced
  • 4 medium yellow onions, diced
  • 2 garlic cloves, crushed
  • 1/2 to 1 tsp red hot chilli pepper ( piment d'Espelette)
  • 2 tbsp olive oil
  • 2 cups white wine
  • salt / pepper

Stuffing:

  • 250 g ground beef + 250 g ground pork
  • 1 egg
  • 2 tbsp chopped parsley
  • 2 garlic cloves, crushed
  • 1 small grated carrot
  • 50 g white bread soaked in a cup of milk
  • salt / pepper

METHOD:

1) Sauce:

  • Dice the onions and the tomatoes.
  • In a deep frying pan, heat olive oil, add the onions, the tomatoes and saute until tender. Then add wine, followed by chilli pepper (piment d'Espelette) and crushed garlic. Stir and let the sauce simmer over low heat while you're preparing the stuffing.

2) Stuffing:

Drain the bread, then in a large bowl, mix together all the ingredients.

3) Stuff the calamari up to 2/3, the pierce the ends with a toothpick to close them.

  • Using a hand immersion mixer, puree the tomato sauce until smooth.
  • Dip the calamari in the sauce and simmer covered over low heat for about 40 minutes (up to 1 h) until tender.
  • Serve with a glass of white wine ( and why not Champagne!! :)) )

Also, your example in 10, concerning the students, is correct because the numbers are related.
